AOILI
Used for thousand of years, Aoili, olive oil based sauces are the essence of every cuisine in the world. Thousands of books could be written about its many different forms. In this section, I’ll be adding gradually some of my favorite ones.
Use these delightful and savory liquid binders to marinate vegetables, season salad, sauté mushrooms or grill, as well. Maybe just dip your favorite bread in it or add juicy flavor to any meal you like.
ROSEMARY-LIME-TURMERIC AIOLI
INGREDIENTS
1 whole lime - peel the zest from it
1 small brunch of rosemary
1/2 oz turmeric - half pinky size
1/2 cup of your favorite olive oil
1 TBSP vinegar
1 TBSP honey
1/2 tsp sea salt
1/2 tsp black pepper
DIRECTIONS:
Blend all ingredients and enjoy. If you are using this aioli for marinating vegetables, skip the salt and add it to your already baked, fried or grilled vegetables or proteins.
