Creamy Avocado Salad
INGREDIENTS
1 cup of almond mayo
1 large avocado - diced
3 medium roma tomatoes
1 large cucumber
½ tsp of black pepper
1 TBSP of mustard
4 stems of cilantro - minced
PREPARATION
Add 1 cup of almond mayo into a bowl. Dice the avocado and add it to the mayo. Partially peel the tomatoes: chop the bottom and top and peel the skin with a knife. Dice the tomatoes and add to the bowl. Same with the cucumber: chop the bottom and top off and then slice the skin to remove. Dice the cucumber and add to the bowl. Add ½ tsp of black pepper and 1 TBSP of mustard. Mince the cilantro and add to the bowl.
ASSEMBLY
You can place a leaf of butter lettuce or chard (broken down with some olive oil) on a plate. This is optional. You could even roll it into a wrap with the lettuce! Put about ½ cup of rice on this plate and cover with a scoop of some of the salad. You can place a cilantro leaf as a garnish.
