DOUBLE BAKED POTATOES PIZZA

Yield 4 to 6 portions

Cooking and prep time: 1hr 45m 

 

Baked Potatoes

Boil for 9 minutes

6 medium peeled and chop potatoes

the strain and have ready

 

Blend to make a sauce: 

½ cup Olive oil

2 tsp sea salt

1 TBSP fresh rosemary

1 red hot chili pepper

6 garlic cloves

½ tsp black pepper 

1 TBSP paprika

 

Separate this blend in half

Preheat oven 450F

In a bowl, place steamed potatoes plus half of sauce 

Mix without breaking potatoes 

Spread on a flat baking pan and bake for 16 minutes or until potatoes get golden. 

Keep oven hot

Mince 1/2 cup basil, 6 parsley stems and 10 arugula leafs

Mix with half sauce and have it ready in a bowl

Remove potatoes and spread on a circular baking pizza pan 

Place them together and slightly smash potatoes so the join with each other. 

You’ll notice some part of the potatoes break in little pieces but that will add more crunchiness after baking again.

Bake until golden again for about 20 m. 

Have ready for the topins  

Toppings:

(You can have ready marinara and almond mayo in advance)

Raw Marinara Sauce

Raw Almond cheese or Nut Mayonnaise 

2 cups Sauté Mushroom 

1 Sauté Peppers

1 cup Marinated Artichokes 

1 cup Baby roasted tomatoes 

1 cup Green Olives

1/2 bunch fresh Basil 

Slice and enjoy :)
