3 portions

3 elements: Jicama Rice, Walnut Spread and Olive Salsa.

JICAMA RICE

An excellent base for different dishes with a fresh, juicy and crunchy touch.

INGREDIENTS

1 medium jicama - or cauliflower 

3 TBSP sesame oil

small brunch of marjoram or your favorite herb

INSTRUCTIONS

Peel the jicama, ensuring to take off the thick skin.  We recommend to cut the jicama horizontally, by placing the flat parts on a cutting board.  Make sure to peel all of the skin off.

Afterwards, slice the jicama using a mandolin into thin strips.  Line the strips together on the cutting board, so that you can cut the jicama into rice size.  If the jicama is very juicy, you will need to strain it a bit by using an almond milk straining bag.  

If using cauliflower as a substitute, cut it into slices first and then cut smaller to create rice size pieces.  

Put the jicama or cauliflower on your plate. 

WALNUT SPREAD

PREPARATION

Add all ingredients to the food processor and process until it has a spread consistency.

You do not necessarily have to use walnuts, you can use almonds, sunflower seeds, pecans or a combination of them.

if using sunflower seeds, make sure to extra wash them while soaking in water.

INGREDIENTS

1 cups walnuts. Sprouted and rinsed from the night before or for 8 hours.

1 carrot - peeled and chopped

1 garlic clove

1/3 serrano chili - chopped

1/2 red bell pepper - no seeds, chopped

1 stem parsley

1/2 lemon juice

1 tsp sea salt

2 tsp paprika

1/4 tsp black pepper

1/2 tsp cumin

1 tsp honey or agave nectar

OLIVE SALSA

INGREDIENTS

1 large beef tomato, about 1.5 cups - diced

1/2 cup green olives with peppers- sliced in half

1 red hot chile pepper, seedless - minced 

2 stems scallions or green onions - sliced 

1 garlic clove - minced

1 oz ginger, thumb size - minced 

1/2 oz. fresh turmeric, half pinky size - minced

1 small brunch of fresh oregano or ½ tsp of dry oregano

1 TBSP olive oil

1 TBSP white vinegar

1 lemon juice

1/2 tsp sea salt

PREPARATION

Mix all ingredients and place in a bowl.

ASSEMBLY

You can compose this dish in many ways. As shown in the picture, there is a section for rice, a section for salsa and a scoop of the walnut spread. Also don’t forget to add a TBSP of sesame oil on the rice and garnish it with marjoram or your favorite herb.
