MAC & CHEESE FUSION

PREPARATION:
Peel, chop and steam potatoes al dente. Add to a medium bowl. Chop onions and garlic, mix with a bit of olive oil and broil until burning a bit. Add to the bowl. Mix all ingredients together and add to the blender in 1 or 2 batches if you are using a conventional blender.. add enough water to achieve a creamy dense consistency.
Coconut Cream Cheese
2.5 qt. approx..
Utensils: Bowl, cutting board, knife, blender
INGREDIENTS:
1.5 lb. potatoes, peeled, chopped and steamed
1/4 onion, chopped and broiled with bit of olive oil
3 garlic cloves… broiled with bit olive oil
1 can coconut cream
¼ cup yeast
1/2 Serrano chili
2 parsley stems - chopped
2 lemon juice
1 TBSP cup vinegar
1/2 tsp black pepper
1 TBSP salt
2 TBSP cup olive oil
1/4 tsp. turmeric powder
water until it blends and has a creamy consistency
Steamed Veggies
INGREDIENTS:
½ lb. green beans – steamed
1 cauliflower head into small pieces, al dente
PREPARATION: Cut in pieces and steam al dente, then, cool down. Make sure to not overcook.
Sauté Veggies
INGREDIENTS:
1 diced onion
1 diced red or orange bell pepper
0.75 lb. mushrooms - chopped vertically about 4 to 5 slices per each one
1 Orange
Salt and Pepper
PREPARATION:
First, slice the onion and bell pepper and sauté separately with olive oil and a bit of salt and black pepper.
Then, add mushrooms to the pan and sautée until they are golden. Do not add salt to mushrooms. Add a drop of orange juice at the end of cooking. This will caramelize with the mushrooms.
Then, mix all together gently.
Garnish
And/or, minced and to your preference:
Arugula, lemon basil, parsley, oregano
