Quinoa Veggie Patties
These one came into life out of the old veggies I found in my fridge when I came back from Maui… you got to use what you have right? Nothing gets waist, It will go to the compost if I can’t use my left over veggies, then compost will transform in magical nutrition for the soil I use for my veggie garden beds. Appreciating the cycles and unlimited intelligence of nature. This dish has also come kimchi that I had already made, it is a little pale, since didn’t add peppers and colorful spices, but flavor wise, bind well with any foods, like the steamed Kohlrabi, beets and carrots and avocado. This dish is a little bit beautify by veggies from the garden, like collar green and leaf from broccoli, massaged enough to break down the fibers and been gently eaten. Also herbs from the garden, the pink flowers are early blossoms that come from lemon mint plant, also has lemon thyme. Recipe in my site under “Culinary” : ) Enjoy.

3 cups cooked quinoa
1 cup oats
1.5 cup your favorite gluten free flour
(I recommend and mix of rice, garbanzo beans, millet and buckwheat flour)
I do it at home with my vitamix ; )
5 eggs
2 cup minced cabbage
1/2 cup minced onions
1 cup minced bell peppers
1 cup minced veggies green
(I used the leafs from a bunch beets and Kohlrabi I had)
4 minced garlic cloves
½ minced jalapeño
minced herbs you have
use your intuition mixed with your common sense to know how much to use
for your intuition to kick, you only need to spend some time with the herbs you are about to use.
Smell it, sense its aroma to the point that you start imagining and co-creating ideas with the plnat… then you are set… basically the plant will tell you how much to add : )
Salt 1 TBSP
black pepper 1 tsp
paprika 2 TBSP
cumin 1 tsp
Mix thoroughly and fried on medium heat olive oil.
Use a metal circle and a cup to make the patties rounder when you fry them if you would like it that way.
Fry each side about 4 minutes each.
