TOMATO GASPACHO

Utensils: A blender, 3 quarts bowl, food processor, cutting board, knife & citrus juicer

INGREDIENTS:

1st - Blend:

8 tomatoes

1 red bell pepper

1/3 serrano chili 

1TBSP vinegar

2 garlic clove

1 ½ tsp. sea salt 

1 tsp. black pepper

¼ tsp. cumin 

2 tbsp. paprika 

4 dates

2nd - Food Processor:

3 peeled carrots

¼ onion

2 cucumbers

3 stalks celery 

3rd - Juice

1 cup orange juice

½ cup lemon juice

4th - Add:

1/4 cup minced arugula

1/4 cup minced basil

PREPARATION: 

First, blend the tomatoes and other ingredients in part 1 and add to a bowl. Second, add to the food processor carrots, onions, cucumber and celery; place these processed ingredients in the bowl with the first blended ingredients.  Third, juice oranges and lemons and add to the mix. Fourth, finely mince the herbs and add to the mix. Place on a pretty plate and eat slowly. 

Gazpacho is an excellent non oil-fresh soup for summer time. It is highly refreshing and hydrating. Easy to digest and perfect as an appetizer.
